Instructions:
- Braise the spinach in 1 tablespoon of olive oil. As soon as the spinach turns soft you should add another 6 tablespoons of olive oil and season with salt and pepper. Continue to stir the spinach until it is completely cooked and then puree it with a hand mixer.
- Fry salmon in the sunflower oil at a high temperature until it’s medium done. When the fish is almost fried to your liking you add the honey and the pine nuts to the frying pan.
Presentation
Arrange the spinach puree in a deep dish and then add the fish with the raw side down on top of it. Finally, sprinkle the pine nuts and feta cheese on top.
